Zymatore Project Mission: To establish a center of innovation & research around our world-classics & world-class breweries. To destroy the conventional boundaries between beer, wine, sake, mead, and spirits.
B. United International's Matthias Neidhart is our favorite beer importer. It's not just because he brings us treasures from all the world over, including the brews of Schneider, Hitachino, De Dolle, Del Borgo and so many more. He's our favorite because of his unbridled passion and his push-the-envelope mindset. These days, Matthias is reinventing the role of the importer. With the Zymatore Project he is sourcing wine barrels from five countries, then aging beers in these barrels in his state-of-the art Connecticut facility. He only approaches winemakers who are "trailblazers" – those who are "trying new techniques and not conforming to the methods that sell to the masses." The barreling decisions are made jointly by B. United, the brewers and the winemakers. This is exciting and new. And the beers are badass!
Beer will be served with cheese and light snacks
